Penne Pasta with Turkey Meatballs and Marinara Sauce

The mouth watering penne pasta sauced with marinara and turkey meatballs, topped with parmesan cheese, Colby jack shredded cheese, and parsley. I love pasta, I came up with this recipe on a night that I wanted something light but pasta and a little different. Now, when you go through the recipe, you will see that I added ketchup and Cholula hot sauce with caramelized onions. Don't get me wrong, I didn't know how this was going to taste but I must say, this was the best turkey meatballs that I have made. My daughter don't like onions but she didn't mind eating the caramelized onions and even said, "the onions are good mom."

Section 2: Directions

  1. Preheat oven to 375°F and brush pan with olive oil or your choice of oil. Caramelize your white onions with butter and caramel sauce. Cook onions until they get golden brown. I like mines a little crunchy.

  2. Put a pot of water on for the pasta. Once water starts to boil add the pasta. I like to add a little salt to my water once it begins to boil.

  3. In a large mixing bowl add the ground turkey, panko bread crumbs, ketchup, Cholula hot sauce, chopped green onions, caramelized onions, and mix all ingredients well. Once you are done mixing, roll the ground turkey into medium size meatballs or the size you desire. Place the meatballs in the pan, cover, and let bake until meatballs are fully cooked. I like to bake cover for 30 minutes and 30 minutes uncover.

  4. While pasta and meatballs are cooking, pour marinara sauce into saucepan and warm up. Add seasoning of your choice but I like to add sugar, salt, pepper, oregano, and garlic powder.

  5. Add pasta and meatballs into sauce and stir until everything has blended in. Add as much sauce as you like and season.

  6. Finalize your dish with parmesan cheese, parsley, and shredded cheese.
